 Instructions:

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Carrots: Using your kitchen knife, peel the baby carrots. If you prefer smaller pieces, slice them diagonally for a more decorative touch. (Don’t forget to be careful when using your knife!)

Make the Glaze: In a small bowl, mix the honey, olive oil, balsamic vinegar, thyme, and rosemary. Stir until fully combined, then set aside.

Toss the Carrots: Place the carrots on the prepared baking sheet. Drizzle the glaze over the carrots and toss them to coat evenly. Sprinkle with salt and pepper.

Roast: Roast in the oven for 20-25 minutes, or until the carrots are tender and lightly caramelized.

1 bunch asparagus, trimmed

 Instructions:

Prep the Chicken: Start by slicing the chicken breasts in half horizontally, so they cook faster and evenly. Season with salt, pepper, and a drizzle of olive oil. Use your knife to zest the lemon and juice it, then combine these with the minced garlic, thyme, and rosemary in a bowl.

Marinate the Chicken: Coat the chicken breasts with the lemon herb mixture. Allow them to marinate for at least 15 minutes (you can also do this earlier in the day and let it sit in the fridge).

Prepare the Asparagus: Trim the tough ends off the asparagus using your kitchen knife, then drizzle with olive oil, salt, and pepper.

Cook the Chicken: Heat a skillet over medium-high heat. Once hot, place the marinated chicken in the pan. Sear for about 5-7 minutes per side, or until the chicken is cooked through and golden brown.

Roast the Asparagus: While the chicken is cooking, spread the asparagus on a baking sheet and roast in the oven at 400°F (200°C) for about 10-12 minutes, until tender and slightly crispy.

Serve and Garnish: Once everything is cooked, serve the chicken alongside the roasted asparagus. For an extra touch of flavor, squeeze fresh lemon juice over the top before serving.
